Turkey Meatballs

Turkey Meatballs


  • Chicken & lemon thyme broth  1 sachet

  • Turkey Thigh Mince 500g

  • Whole white onions 2

  • Rapeseed oil

  • Salt & pepper to taste

  • All spice powder

  • Dried cranberries 50g

  • Lemon thyme sprigs

  • Orange

  • Fresh parsley

  • Sprouts – shredded & whole leaf

  • Rainbow carrots

  • Turnip


Making the turkey Meatballs:

  1. Mix together the Turkey Thigh mince with the cooked onion mix. Add the chopped parsley

  2. Finely chopped orange zest season with salt & pepper to taste.

  3. Roll into 10g balls refrigerate until required.

Cooked Onion mix:

  1. Finely chop 2 white onions fry in 3tablespoons of rapeseed oil  & a knob of butter.

  2. Season with salt & pepper,  all spice , chopped cranberries, fresh lemon thyme leaves.

Assembling the dish:

Fry the turkey meatballs , spiralise the raw peeled turnip. Wilt the turnip in a Knob of butter ,season with salt & pepper. Add the finely shredded sprouts.

Dilute 1 sachet of the Chicken & lemon thyme broth in 180ml of boiling water. Place Turnip noodles, sprouts, meatballs In a bowl, add the hot broth finish with wilted rainbow carrot shavings & blanched sprout leaves.
